Pacha Cheera/Green Spinach Thoran

Leaf thoran has been an important part of my lunch box(From KG class itself :)), as my mom is very keen in our food habits. I still remember our backyard of "Adhiya", which was full of trees and especially Spinach & Drumstick plants. Taste of leaf thoran always bring me back to the memories of "Adhiya", our sweet home @ Kollam :).

Ingredients:
(For 3-4 serves)
1.Spinach
2.Mustard seeds - 10 to12
3.Coconut oil – 1 Tbspn
4.Dry chillies – 2 nos
5.Coconut(Grated) - ½ cup
6.Turmeric Powder – 2 pinch
7.Small Onions – 3 nos
8.Garlic Chopped – 1 Tspn
9.Green chillies – 2 nos
10.Salt

Wash and clean the spinach.Chop the spinach in to desirable size.
For making dry gravy, take the ingredients(from 5-10) and juss smash it using mixie. It should be in the smashed form and no need to make it like a paste.
Heat the oil and put mustard seeds in to it. Put dry chillies and stir it until it become light brown.
Add spinach and smashed gravy alternatively(Put some spinach first and then add gravy, then spinach and so on..).
Close the lid for 1 minute. Mix the spinach and gravy well and again close the lid and cook for 7 minutes. Stir well if needed.
No need to add water in between, as water from the spinach is enough for cooking. Serve hot.
